doesnt it need someone to hold all the power and control it? i forgot whats it called but pretty much it would prevent it from making the led pop or blow from too much pedaling

what if you use a lot of capacitors? Will it still light up the led after break is apply?

There would be no gain. You would actually create more of a load. There is NO FREE ENERGY! Energy cannot be created or destroyed, it can only be changed from one form to another.

Can you add like 6+ of those generators to each tire on both sides a total of 24 maybe and use those to power up a small electric motor on the back tire? It would be hard to start pedaling at first but as the motor gets juice it would be easier? Is it possible?

Bridge rectifiers waste a volt and a half of voltage drop across the diodes. Use Schottky diodes and use a pair, not a bridge. You can easily find them in old PC power supplies. Better yet, just put the LEDs in parallel cathode to anode, and let them do their own rectifying, actually just conducting and lighting alternately on each half of the AC cycle.
