Standard bike or Reskins (Reskins of standard bike: flame rider, varmint, pipe frame, wild wiggler, w25 silver arrow, etc.)

Try using a high handling wheels and characters with high acceleration karts, this is a slow but incredibly steady and controllable and easy to drive setup:
